A Meal that Everyone Will Love

There's nothing better than hanging with good friends and eating great food.  Cooking for a group of people can be intimidating, not to mention a lot of work.  A family style meal is always a safe bet in my book...pasta, salad, garlic bread, wine...perfecto!   At a recent dinner with friends we had a pasta dish with sweet sausage and cauliflower.  I often make pasta with sausage with broccoli rabe.  The only issue is that my kids tend to be turned off by anything green on their plate.  So, the cauliflower got me thinking.  It's white, blends in with the other ingredients and is so mild that it tends to take on the flavor of the garlic and sausage.  Now the question is, "can I get the kids to eat it?".  I'm always up for a challenge, especially one that results in an amazing Italian meal.  Anyway, I thought I'd share the recipe with you all.  Happy Monday!  xoxo - S

Spaghetti with Sausage and Cauliflower

Ingredients:
1 lb. Sweet Sausage removed from casings
1 lb. Spaghetti or any pasta of your choice
1 heads of Cauliflower, broken into small florets
6 cloves of garlic
1 cup Parmesan Cheese
Olive Oil
Salt and Pepper to taste

Directions:
Preheat oven to 300 degrees.  Roast 6 cloves of garlic with olive oil on a baking sheet until tender.  Set aside and lightly chop once cool.  Saute crumpled sausage over medium-high heat with one tablespoon olive oil until fully cooked.  Drain grease from sausage and add cauliflower and saute until until edges are brown, about 2 minutes.  Add sausage and cauliflower to a baking dish and toss with garlic and coat with olive oil.  While mixture bakes, boil a large pot of water for pasta.  Cook until al dente, drain and combine sausage and cauliflower.  Lightly toss in Parmesan cheese and oil, salt and pepper to taste.  Serve warm with garlic bread and salad.
